Slow cooker fans, this leave-it-and-go healthy dinner recipe is for you. I know the big craze is the Instapot – which is amazing for perfectly cooked meat dishes – but I still love the planning convenience and ease of my slow cooker. I’m often driving kids from lessons or sports practice from 2:30-5:30pm so really during the week, the faster Instapot doesn’t work with my schedule. I love walking in the door and having dinner ready.
My slow cooker still gets plenty of use and this sweet moist chicken recipe is one of my weeknight staples. What I also love about this recipe is the complexity the fresh oregano brings to the honey chicken. Oregano is one of the most under appreciated fresh herbs. It’s extremely hearty and easy to grow. It’s super flavorful. And it’s one of the healthiest herbs you add to your diet.
Even if you don’t have a green thumb, oregano will grow for you! The oregano in my herb garden literally grows out of control. I have to cut it back each year or it takes over. I love its smell and its pretty tiny intricate flowers when it blooms. Having the fresh oregano is great for adding the peppery leaves to salads, coating grilled meats and fish and is a great flavor addition in many recipes. Oregano can be used in so many more dishes than just pizza or Greek food.
Having it available to use often also means that my family is getting oreganos health benefits. Oregano is packed with antioxidants, vitamins A, B6, C, E, B12 and minerals iron, magnesium, calcium, and potassium. Oregano’s phytochemicals are anti-inflammatory, have cancer fighting effects and are even antimicrobial. The oregano extract is also a great addition to your medicine cabinet to have handy at the onset of a cold or sore throat.
