This fresh herb egg salad is delicious any time of the year, but it was inspired by this lovely Easter Sunday. There are always just a few too many hard boiled eggs at Easter, so what better way to use them than in a healthy salad? The chopped green basil, mint and tarragon are happy bites of springtime with the creamy savory eggs. I love serving this salad on top of my SAVORY CASSAVA WAFFLES – a perfect breakfast and brunch combo.

Ingredients

Instructions
  1. Wash your fresh herbs and pat dry.
  2. Peel your hardboiled eggs and slice them into chunks. Place in a bowl.
  3. Chop the herbs and add them to the bowl of eggs with a fork to mash them into the eggs a bit.
  4. Stir in the olive oil with eggs and herbs.
  5. Sprinkle the garlic and salt over your salad and stir one last time.
