Giant caramely medjool dates are so delicious but they are extremely sweet. This recipe helps to balance the natural date sugar with some protein and fat grams from nut and seeds making a satisfying healthy treat. They’re a great project to do with kids who can pick and choose what to stuff in their dates. My kids love making platters of these treats for play dates and special events.

- 12 dates pitted medjool dates
- 1/2 cup almond butter
- 1/4 cup shredded coconut
- 1/4 cup almond slivers
- 1/4 cup pumpkin seeds
- Gently using a knife, slice each date length wise to open just one side and remove the pit.
- Measure out the ingredients and set up a date candy making station.
- Using a tiny spoon or knife, stuff each date with some almond butter.
- Stuff any combination of the other toppings to stick in the almond butter.
Other good toppings can be sesame seeds, sunflower seeds, cashews, walnuts, pecans and even mini chocolate chips. And any nut or seed butter works!
