Butternut Pomegranate Rolls

Soft dinner rolls are not often synonymous with gluten-free bread. Luckily this grain-free, seed-free recipe is soft, moist, versatile and healthy. The subtly sweet butternut squash flour balanced with savory Indian water chestnut flour can compliment morning bacon and eggs or an evening meal of roasted chicken and veggies. I have even served this as a squash dog – Fork in the Road hotdog with bun and dinner is done 🙂

By adding some pomegranate seeds and shredded carrots, this recipe transforms into a delicious sweet muffin snack with great texture and without any added sugar. Dried apricots also work well to naturally sweeten the batter. Savory or sweet, dinner roll or muffin, this recipe works!

It’s not easy to find delicious gluten-free recipes that are also free of any grass family ingredients. Most commercial gluten-free foods have just switched from wheat to another relative of wheat like corn or rice. The grass family is composed of several gluten containing foods: wheat, rye, barley and also composed of the non-gluten containing foods: corn, rice, oats, millet, sorghum and sugar cane. All of these foods are derived from the crops’ edible seeds. Gluten can cause inflammation and allergic reactions and so can seeds – especially grain seeds. If you are already sensitive to gluten you are more likely to also be sensitive or develop a sensitivity to a relative of wheat. So whether you are sensitive to gluten or seeds, not eating foods from the grass family every single day is one way to prevent yourself from becoming sensitive to the foods in this family.

Instructions
  1. Preheat your oven to 350. I use convection bake.
  2. Soak the tablespoon of chia seeds in the 1/4 cup of apple cider vinegar.
  3. Measure and mix the dry ingredients.
  4. Measure and mix the wet ingredients then add them to the dry.
  5. Gently fold in your shredded carrots and fruit choice if you like.
  6. Moderately oil your muffin pan - I use silicone. Spoon in the batter evenly.
  7. Bake 20-21 minutes. Just when the top begins to brown, they're done.
