Aronia berries or chokeberries are becoming a popular nutraceutical fruit crop. This small sour deep purple superfood is packed full of vitamins and antioxidants like ANTHOCYANINS. These gluten-free, vegan cookies are a great snack and a great way to get some of these healthy anthocyanins in your diet. Aronia berries are a bit tart so you may want to mix half dried aronia berry and half dried blueberry in your recipe which give the cookie a nice sweet and sour taste profile. Instructions
  1. Preheat oven to 350 degrees.
  2. Mix the chia seeds and water. Let sit for 5 minutes to thicken like eggs then add vanilla.
  3. Melt 1 cup of coconut oil with the measuring cup in hot water and then add to the chia seed mixture.
  4. Add the honey to the rest of the wet ingredients too.
  5. Mix all the dry ingredients and then slowly add to the wet.
  6. Once your dough is well mixed, add 1 cup of dried berries and do your final stir.
  7. Use a medium size mellon baller to form each cookie and roll with your hands to finish and press down into a nicely shaped cookie.
  8. Bake on silicone sheet for 10-12 minutes at 350 degrees.
Recipe Notes

I'm all about convenience. If you don't have dried aronia berries on hand - I can't imagine why you wouldn't...ha ha - you can also use blueberries or raisins or even chocolate chips. This cassava flour cookie dough is very versatile and works well with everything. Mixing half aronia berries and half blueberries is also delicious.
