Savory Cassava Waffles

Dry, crumbly gluten-free breads have you down?  This moist yet crisp, grain-free, Paleo and vegan savory waffle will cheer you up morning, noon or night. It’s the perfect compliment as toast for eggs over easy, bread for grilled cheese or an open faced French dip. The recipe ingredients also make this waffle extremely healthy and friendly for most diets.

Cassava flour isn’t readily available at most grocery stores but can be purchased on Amazon. OTTO’S cassava flour is a bit lighter when baking and ANTHONY’S works almost as well and is $3 a pound cheaper. I recommend and use both.

Health Benefits

Made from the tuber vegetable cassava, these waffles are a LOW GI FOOD – low glycemic index food which means they don’t spike blood sugar levels. Cassava is also a DIGESTIVE RESISTANT STARCH which assists in keeping gut flora balanced. The SAPONINS contained in cassava also balance gut flora as well as ease inflammation. Cassava is really a great food to have in your weekly rotation for so many reasons.

These waffles are also super freezer friendly 🙂 I love making several batches to store in my freezer so I can quickly grab some anytime for a quick breakfast or lunch. Ingredients

Instructions
  1. Measure and mix your dry ingredients.
  2. Turn on your waffle maker to the medium setting to warm up.
  3. Measure and mix your wet ingredients and then add the dry and wet together.
  4. You don't need to oil your waffle iron - just add your first 1/2-3/4 cup of batter. You can sprinkle fresh herbs on top of the batter if you're using those.
  5. The nifty waffle maker will beep at you when the waffles are done - it's very easy. Sometimes part way through I turn the waffle maker up one notch to make the waffle extra crispy.
Recipe Notes

I love finely chopping about 1/4 cup green onion (1 green onion), 1/4 cup cilantro and 1 sprig of tarragon and sprinkling the fresh herb mix on top of each waffle. This add lovely bites of flavor and the waffles look so fresh and pretty! Other fun fresh foods to add are olives, fennel seeds, flax seeds or turmeric. You can experiment with how much of each ingredient you like best. My kids prefer them PLAIN for PB&J sandwiches and I omit the garlic powder in some batches to use as neutral sandwich bread.
